Harvesting & Processing
• Harvesting: The nuts are mechanically shaken from trees.
• Drying: Moisture is reduced to 6% to prevent spoilage.
• Shelling (Optional): Some pistachios are sold in-shell, while others are shelled.
• Roasting & Flavoring: Some nuts are roasted and salted.
